Europe’s wheat is maturing 20 days earlier than in 2000. Why it matters


Europe’s crops are reaching maturity weeks earlier as rising temperatures accelerate growth, but heat and drought are threatening yields across key farming regions

Europe is harvesting some of its crops weeks earlier than it did a generation ago. But the earlier harvest is not necessarily good news: the same heat accelerating crop growth is also putting yields under pressure.

Winter wheat reached maturity in some parts of the European Union up to 20 days earlier in 2026 than in 2000, according to European Commission data. Similar shifts have been recorded for rapeseed and maize.

The change offers a clear indication of how a warming climate is altering one of Europe’s most basic agricultural rhythms.

But an earlier harvest does not automatically translate into a larger or healthier crop. Higher temperatures can speed up plant development while heat and drought during critical stages can reduce yields.

That tension has become increasingly visible across Europe this year.

Europe’s harvest calendar is shifting

The change is already evident on farms. Hermann Greif, district president of the Bavarian farmers’ union of Upper Franconia, told Reuters that maize harvesting in the region used to be in full swing around September 14, 15 or 16 more than two decades ago.

Now, farmers are moving towards the beginning of September.

Wheat has undergone a similar shift. Greif said farmers traditionally harvested wheat during the second week of August, between August 10 and 15. Today, wheat can sometimes be ready in the final days of July.

Crops are typically harvested between 10 and 20 days after reaching maturity, although the gap varies depending on the crop, country and weather conditions.

The earlier timetable is closely connected to temperature.

Sebastien Poncelet, senior analyst at Argus, told Reuters that plant development is largely driven by the accumulation of heat units needed to move from one physiological stage to another.

As temperatures rise, crops accumulate those heat units faster. Their development cycle consequently speeds up, bringing forward maturity and harvest.

Europe is the world’s fastest-warming continent. In 2026, it experienced several heatwaves, with extreme heat arriving in some areas as early as late May.

Why earlier does not mean better

For farmers, the important question is not simply when a crop matures. It is what happens to the crop before maturity.

Plants need water and favourable temperatures during critical stages of development to build yields. If excessive heat accelerates their development while drought limits access to water, crops can mature sooner without reaching their full yield potential.

That creates a difficult trade-off.

A crop may be ready for harvesting earlier, but the shorter development period and stress from heat or water shortages can leave farmers with less to harvest.

“Some crops that are harvested later and whose critical growth stages coincide with spring and summer droughts face significant difficulties,” Greif told Reuters.

The risk is particularly acute when drought strikes while crops still have substantial water requirements.

France’s maize crop shows the damage

France provides one of the clearest examples of the problem.

FranceAgriMer, the country’s farm office, estimated that only 27 per cent of the grain maize crop was in good or excellent condition as of August 31.

It was the lowest level recorded by the agency since it began keeping comparable records in 2011.

The deterioration followed extreme weather that hit maize particularly hard.

France’s agriculture ministry has forecast a 35 per cent fall in grain maize production from last year.

Analysts cited by Reuters expect an even sharper decline of around half, which would leave French output at its lowest level since 1976.

The figures show why an earlier crop cycle cannot be viewed in isolation.

A faster-growing crop is of little benefit if drought and extreme heat reduce the amount of grain it ultimately produces.

The bigger change in European farming

The shift in maturity dates is part of a wider transformation in European agriculture.

Farmers have traditionally relied on established planting, growing and harvesting windows. Warmer temperatures are now moving those windows forward, while increasingly volatile weather is making them harder to predict.

Heat can accelerate crop development. Drought can limit growth. Heavy rainfall at the wrong time can cause additional damage.

The result is a narrower margin for error.

For some crops and regions, warmer conditions can offer benefits by extending the period in which crops can be grown. But those gains become harder to realise when higher temperatures are accompanied by prolonged dry spells and extreme heat.

The distinction is important because climate change does not affect every crop or region in the same way.

Why Europe’s harvest matters beyond Europe

The consequences extend beyond individual farms.

Europe is a major producer of wheat, maize and oilseeds. Changes in output can affect livestock feed, food processing, biofuels and agricultural trade.

Lower production can also alter export availability. Countries that normally have a surplus may have less to sell abroad, while others could become more dependent on imports.

That matters for global food markets because Europe is part of an interconnected agricultural system in which weather disruptions in one major producing region can influence supply expectations elsewhere.

The pressure is already visible in global food markets.

The UN Food and Agriculture Organization said global food prices rose in August to their highest level since late 2022. Its cereal price index also reached its highest level since May 2024.

Extreme weather affecting European crops has added to concerns over supplies.

That does not mean an earlier European harvest will directly cause higher food prices. Commodity prices are influenced by global production, inventories, trade flows, demand, energy costs and currency movements.

But Europe’s experience highlights a broader issue: the climate is changing both the timing and reliability of agricultural production.

The new farming calendar

For European farmers, the traditional harvest calendar is becoming less reliable.

Wheat that was once commonly harvested in August can now be ready in July in some areas. Maize harvesting that was associated with the middle of September is moving towards the beginning of the month.

The change is measurable. In some parts of the EU, winter wheat is reaching maturity up to 20 days earlier than it did in 2000.

But the more important question is what happens to yields.

If warming continues to accelerate crop development while heatwaves and drought become more frequent or severe, farmers may increasingly face a situation in which crops mature earlier but produce less.

That is the central challenge behind Europe’s shifting harvest calendar.

The crops may be reaching maturity sooner. But for farmers, the race is not to harvest first. It is to get enough yield before heat and water stress take their toll.
